Ingredients
- 1 head cauliflower
- 1/3 cup Olive oil
- 3 cloves garlic (crushed)
- 1/4 cup grated Parmesan cheese (divided)
- 1 tsp fresh sweet basil
- 1 tsp fresh italian parsley
- 1 tsp fresh garden thyme
- 1/2 tsp Sea salt (or more to taste)
- 1/4 tsp Black pepper
Method
Step 1: Preheat oven to 200°C.
Step 2: Wash cauliflower well and remove outer green leaves and as much of the woody stem as possible without the head falling apart.
Step 3: Mix the oil, garlic, half the parmesan and the remaining herbs and seasonings in a small bowl.
Step 4: Place the cauliflower into a deep casserole dish, upside down and pour half the mixture over the core and allow it to drip through the entire head.
Step 5: Turn over the head and drizzle the remaining oil over the entire head, spreading it out with a pastry brush if required.
Step 6: Place a lid on the casserole dish and bake for 45 minutes until tender.
Step 7: Remove the lid and sprinkle over remaining parmesan cheese, grill until crispy and serve!
