Broccoli Fritters

Makes 10 Fritters.

After a bumper harvest from your very own garden, you may need some creative ways to use up your bounty. These deliciously crispy fritters are warm and comforting, and useful to hide vegies if you need to.

Ingredients 

  •  1 head of broccoli
  •  1 large egg
  •  1/2 an onion
  •  2 garlic cloves
  •  1/3 cup shaved Parmesan
  •  1/3 cup plain flour
  •  1 teaspoon salt
  •  ¼ teaspoon black pepper
  •  Olive oil cooking spray

Method 

Step 1: Preheat oven to 200°C
Step 2: Roughly chop broccoli into large florets, then place in a food processor along with the egg, garlic, flour, parmesan, salt and pepper. Pulse until very well combined
Step 3: Using your hands, form the mixture into 10 patties and place on baking paper lined trays, ensuring they do not touch
Step 4: Spray oil lightly over the patties and bake for 15 minutes on each side until golden and crisp
Step 5: Allow to cool before serving with an extra sprinkle of parmesan cheese if desired.
