Pak choi 'Purple' is a versatile and fast-growing Pak choi with dark green young leaves that mature to a dark maroon with green undersides. The flavour is sweet with a hint of mustard. Harvest at 3-6 weeks or pick a few leaves at a time as required. The whole head can be cut 2.5cm above ground level and left to re-sprout. Use in salads, soups or stir fries.
